What is your guilty pleasure?
Lots of cream and sugar in my coffee.
If you could eat only one food for the rest of your life, what would it be?
Pretty much any fruit that's in season and at its peak.
What does your family beg you to make at home?
A big breakfast on the weekends.
Describe the best meal you've ever had.
Anything home cooked and with my family is a meal that is as good and memorable as the last one.
What is your favorite local ingredient?
If you can make a meal for anyone, who would it be and why?
I most enjoy cooking for my kids and getting them to try new things they haven't had before.

Michael Paley is the Executive Chef of Central Standard and Café No Sé restaurants at the South Congress Hotel, also serving as Executive Chef of the South Congress Hotel overseeing events, in-room dining and bar menus for the lobby bar and pool bar. Prior to joining the South Congress Hotel, Paley was Executive Chef of Metropole at the 21c Museum Hotel in Cincinnati, OH, and before that, the Executive Chef of the acclaimed Proof on Main in Louisville, KY. He was also the Executive Chef and Partner at Garage Bar in Louisville. Previously, Chef Paley worked with legendary chefs and operators in New York City such as Daniel Boulud and Drew Nieporent of Myriad Restaurant Group.
