With all the buzz surrounding the reopening of Green Pastures and it's fresh new restaurant, Mattie's, we took the opportunity to check in with their Executive Chef, Joshua Thomas, to find out his guilty pleasures and the one food he can't live without!
Chef Spotlight: Executive Chef Joshua Thomas of Mattie's at Green Pastures
What is your guilty pleasure?
Ruffles and French Onion Dip. It’s total high school graduation spread fodder, but it’s so good when I get to watch my Buckeyes.
If you could eat only one food for the rest of your life, what would it be?
Eggs. There’s a million things you can make with eggs, and they’re always good.
What does your family beg you to make at home?
My wife loves it when I make Indian food at home. It is usually things my mother makes for me that I try and replicate. These homemade dishes are completely different than the terrible buffet food that you get in most restaurants. No one makes great Southern Indian food -- except for the moms and grandmas at home!
Describe the best meal you've ever had.
That’s easy - it’s always Christmas dinner in Ohio with my family. I don’t get up there very often anymore, but my mother always makes a traditional Southern Indian meal that has a very light chicken curry with coconut, a beef curry, and an egg roast dish. She also makes what she calls “beef cutlets” that are always spiced just right. To top it all off, she makes this beautiful, fluffy bread called “appam”. It beats anything I’ve had anywhere else. We get a ton of wine and all have a great time together enjoying the amazing food.
What is your favorite local ingredient?
Chives from La Flaca.
If you can make a meal for anyone, who would it be and why?
Always my wife - she’s my rock and has helped me to get where I am today. We’ve always enjoyed our eating adventures together - so many great memories!
About Executive Chef Joshua Thomas:
From the beginning, Ohio native Joshua Thomas has never been one to go with the flow. Despite what may be on trend, Thomas has always enjoyed the opportunity to create recipes and menus that he believes will provide his guests with the most satisfaction.
Thomas attended Miami University where he earned a bachelor’s degree in Finance, believing a firm grasp on financial and accounting principles is critical to any business, especially in the restaurant industry. He then went on to earn his associate’s degree in Culinary Arts from the Culinary Institute of America where he gained the basis of his cuisine knowledge.
Thomas began his culinary career at three-star Michelin restaurant, Le Bernardin in New York City, where he established his culinary skills under world - renowned chef, Eric Ripert. Additionally, Thomas held the executive sous chef position at Devi NYC, where he and his team earned their own Michelinstar. Thomas has also offered his expertise to several other reputable eateries including W Hotel, Everest and American Masala. In 2010, Thomas made the move to Austin where he ran his own Indian - inspired food truck the Chaat Shop until 2015.
Thomas’ unmatchable experience and established artistry has made him a frontrunner in the food industry. Texas hospitality and approachable, thoughtful cuisine are at the heart of Green Pastures’ tradition and Thomas is keen on reflecting this at Mattie’s.
Thomas currently resides in South Austin with his wife Allison and two children. When he’s not busy in the kitchen, Thomas enjoys listening to music, building IKEA furniture, learning about wine and experimenting with cocktails.
